Background:
Through this seminar, FSIS is offering industry trainers an overview of
the training program that FSIS inspectors are receiving in the areas of
pre-HACCP, sanitation standard operating procedures and cultural change.
FSIS is currently in the process of training field inspection and compliance
personnel on the Pre-HACCP requirements contained in the final rule on Pathogen
Reduction and HACCP. The training is intended to accomplish the following:
1. Equip employees to perform the inspection tasks for the regulatory oversight
of Pre-HACCP requirements,
2. Prepare employees for the changes that will be brought about by the new
Pathogen Reduction and HACCP rule, and
3. Equip supervisors to lead the changes that are being brought about by
the new Pathogen Reduction and HACCP rule.
The focus of the current training effort is on Pre-HACCP and the organizational
culture changes generated by the new rule. The current training initiative
does not address any aspects of the HACCP and Salmonella requirements
contained in the new rule. The training of the field workforce on the regulatory
oversight of HACCP and Salmonella requirements will commence around
October 1997.

Industry Seminar Objective:
Upon completion of this program, participants will have an understanding
of the learning objectives of, and course contents for, the Pre-HACCP and
Cultural Change Training Programs being given to FSIS field inspection and
compliance personnel.

Procedures Training Materials, please do so prior to the seminar and
bring the written training materials with you to the seminar.
